Add 1kg of Frosty Whip powder to a minimum of 1 litre of water or a maximum of 4 litres of water and any quantity in between (app 17ºC / 62ºF), depending on what you want to make with the whipped cream, and stir until all powder is wetted. Whip at medium speed until peaks start to form. Whip at full speed until fully aerated. Note: Warmer water will result in longer whipping times. The yield depends on the mixing ratio with water, whipping speed, time and water temperature.
Use a ratio of 1 part powder to 3 parts water. Add measured cold water to a mixing container. Use straight away or store in refrigerator until needed. The product may need stirring to loosen before use if stored in refrigerator.
Add powder to cold water, ratio depending on desired consistency: Heavy (1 part powder to 1 part water). Medium (1 part powder to 1.5 water).

As a general guide, soft serve mix can be mixed and chilled 2–3 days in advance. This timeframe represents the total recommended period from rehydration to discard and should not be exceeded.
Pre-batching soft serve mix can help improve operational efficiency, particularly for venues that need to top up machines throughout the day. However, you must always check your local health and food safety regulations to ensure pre-batching is permitted in your area.
Pre-batching and storage guidelines
When pre-batching soft serve mix, it is essential to follow Good Management Practices (GMPs) to maintain food safety and product performance:
- Use only clean, sanitised food-grade equipment (such as buckets, whisks, or hand blenders) dedicated exclusively to soft serve preparation
- Store mix in food-safe containers with airtight lids
- Once rehydrated, soft serve mix is treated as fresh dairy and must be stored refrigerated below 5°C (this applies to both dairy and non-dairy blends to ensure freshness and optimal performance)
- All pre-batched mix must be used or discarded within 2–3 days
- Do not freeze pre-batched soft serve mix
Following these guidelines helps ensure consistent product quality, food safety, and smooth machine operation.

As a general guide, soft serve or frozen yoghurt mix can remain in the machine for 2–3 days total, calculated from rehydration to discard. This is the maximum recommended timeframe to maintain product quality and food safety.
Can the mix stay in the machine overnight? Yes — only if your machine is set to standby mode and your local health regulations allow it.
Standby mode typically maintains the mix at 4–5°C, helping prevent spoilage and ensuring the product remains safe and ready for use the next day. If your machine does not have standby mode or if standby is not activated, the mix should not be left in the machine overnight, as temperature fluctuations can compromise both food safety and product quality.
Always refer to your machine manufacturer’s guidelines, as operating requirements can vary between models.
What happens if the machine is not put on standby overnight? If a machine has been left overnight without standby mode enabled, food safety and machine performance may be compromised. In this case: running a wash cycle to liquefy any remaining mix, discarding all remaining product, thoroughly cleaning and sanitising the machine and all removable parts, refilling the hopper with fresh mix before restarting.
Prompt action helps ensure hygiene, prevents downtime and protects equipment performance. To avoid this situation, consider using a closing checklist or setting end-of-day reminders to activate standby mode.
How long can mix be stored in different machine types?
- Conventional machines: mix must be used or discarded within 2 days
- Heat-treated machines: always follow the manufacturer’s guidelines
What is “re-run” mix and can it be reused? “Re-run” refers to mix that has been previously dispensed from the machine but not served. To reduce wastage, re-run mix may be collected in a clean, sanitised container and combined with fresh mix, provided:
- Re-run does not exceed 40% of the total mix volume
- The combined mix is used within the approved timeframes
- All handling follows Good Management Practices (GMPs)
- Local health regulations permit this practice
Frosty Boy Australia does not recommend the use of re-run mix.
Best practice guidelines for handling soft serve mix or re-run mix;
- Confirm your local health code allows the practice
- Follow Good Management Practices (GMPs) at all times
- Set the machine to standby mode overnight
- Use designated, food-safe equipment exclusively for soft serve preparation and storage
- Sanitise all equipment and utensils (containers, whisks, etc.) before use
